The simple Tuscany style cooking

The Terre Brune Restaurant offers a revival of dishes from the past in the Maremma style. They are dishes that are part of the traditions of the area or dishes that have been changed over the years and are now offered again respecting the original recipe. It is a journey into the past to satisfy all the senses.

We recommend polenta made with chestnut flour from the Amiata area served with ricotta cheese and "macchiaiolo nero" (Pork endemic to Mount Amiata) sausages. Sheep ricotta cheese from the local creamery, or beet from our vegetable garden, eggs and flour from the surrounding farms in order to make the real tortelli (fresh pasta types) in the Maremma style. We also recommend some traditional soups like acquacotta soup (made with sausages, eggs, bread, potatoes and chicory).
